Homemade Baklava: A fool-proof dessert

BY AMANDA PIEDIMONTE

A few years ago, I offered to make dessert for Aurélie’s birthday dinner. Not having a huge sweet tooth, as alluded to here, she instructed me to go nutty rather than chocolatey or fruity. And so the idea of making homemade baklava was born! (Actually, I couldn’t decide between baklava or hazelnut crème brûlée so I made both…)

Amanda and Auré’s Favourite Things

BY AMANDA PIEDIMONTE AND AURÉLIE PTITO
From the Chocolate Throwdown

Homemade Ice cream and chocolate brownie

When it comes to food, Amanda and I are the same person. This makes her my favourite restaurant-going buddy, since whenever we go out to eat, all we need is one glance at the menu and, through some weird gluttonous unspoken communication, we already know what we’ll be sharing. This made her the obvious choice as a partner for the Chocolate Throwdown (also, I kind of think she’s awesome). We were inspired by Ben and Jerry’s fanciful ice cream flavours, specifically Jimmy Fallon’s Late Night Snack, which, among other things, features fudge-covered potato chip clusters. And since neither of us has an insane sweet tooth, we decided to balance out the sweetness by adding as many salty components as possible. So, let us now present our favourite things!

*Test your Knowledge and Win a Foodie Collective Book*

BY CATHERINE MOREAU

Trivia Night

On February 13th, six of the Foodie Collective’s best and brightest joined forces to test their knowledge at Santropol Roulant’s 4th Trivia Night. Held at Santropol headquarters, participants were asked to contribute 10$ each (60$ per team of six) with all profits going to the Roulant. Beer and wine were available and large bowls of Chex mix abounded on each teams’ table. It was a great turnout, with more than eight teams in total. You could feel the brain cells buzzing!

The mocktail and other tips on surviving a month without alcohol

BY AMANDA PIEDIMONTE

This February, I’m participating in the Fondation Jean Lapointe’s fundraising challenge Les 28 jours les plus longs de ma vie, aka the 28 longest days of my life. By participating, I’ve agreed to donate a minimum of 28$ towards alcohol and drug-abuse education programs aimed at secondary 1 students. The challenge requires to give up drinking alcohol for one whole month, which means facing a plethora of social and personal situations that will tempt me to reach for a drink. Here’s my plan of attack:

Crostoli: A Northern Italian Treat

BY AMANDA PIEDIMONTE
From The Christmas Throwdown
Crostoli

Crostoli are essentially fried dough ribbons covered in icing sugar. This classic Northern Italian dish is from the Friuli region, which is where my mom is from.

Not only are they delicious, but highly addictive. I suspect my mom likes to make them (and only during semi-formal holiday occasions) because you can’t seem to eat these without leaving a ridiculous trail of icing sugar on your shirt and yet, you keep reaching for a second piece. Light and crispy, this is the kind of dish that will vanish in no time no matter how many people are sitting around the table.

Your Guide to a Juicy Turkey

Thanksgiving Dinner

This past weekend, I hosted my 4th annual pot luck Thanksgiving dinner in honour of our American friends. But really – it was for me because I simply love Thanksgiving food. I stuffed and roasted a bird, provided plenty of the usual accoutrements: homemade cranberry sauce and gravy and even whipped up a pumpkin pie. My guests brought a smörgåsbord of side dishes, appetizers and some fantastic wines. Continue reading

Sweet and Salty Pancakes with Candied Bacon Whipped Cream and Whiskey Syrup

FROM THE DINER THROWDOWN

I definitely did not lack inspiration for the Diner Throwdown. I hesitated until the very last minute on what dish to make, finally deciding on sweet and salty pancakes over runner-up ideas like meatloaf, burgers, mac’n cheese, grand slam breakfast, grilled cheese, etc… As you can probably tell from that list, I don’t have much of a sweet tooth. So my newfound pancake obsession was quite a surprise! I wanted to make them as light and salty as possible, which is why I opted to use cake flour (which is already pre-loaded with baking powder and salt) and salted butter in the pancake batter.
