Traditional Irish Boxty Pancakes

This past Saint-Patrick’s day I decided to host a pre-parade brunch that consisted of various Irish staples, which included boxty pancakes (bacstaí or arán bocht tí meaning “poor-house bread”). Not being a fan of regular pancakes (I know, it’s hard to believe!), I was excited to try out these traditional Irish pancakes, which are like a cross between a latka, a hash brown and a standard pancake. Much lighter and less oily than latkes or hash browns, boxtys have all the pillowiness of a pancake, but with slightly more texture.

Trying to beat the winter blues? Here’s how The Foodie Collective does it! Get some good friends together and try your hand at making tacos. Fish, pulled chicken (or any slow cooked meat) and veggie tacos are delicious, reasonably healthy and get everyone making their own to taste. Paired with margaritas and some funky beats, you won’t feel the cold winter chill… mind, you might not feel much of anything after a margarita or two!

Potato Heaven


I love potatoes. In any shape, size or variety. Boiled, mashed, baked, fried, steamed, even microwaved. In fact, you could say I’m slightly obsessed with them and I’m sure it’s no coincidence that my last name (Ptito) even sounds like potato. It’s no surprise then that my go-to comfort food would feature these delicious starchy gems.

Cake Anyone?


“First and foremost, I need to give credit to my mom for winning this Throwdown. I grew up on her cheesecake and have eaten it more times than I care to remember, enjoying it every single time. Whenever there’s a family celebration (and coming from an Italian family there are many) someone always asks my mom to bake this cake. She reluctantly agreed to give away her coveted recipe. I promised that I would leave out one key ingredient to keep people guessing. Decadent, cheesy, not overly sweet, this cheesecake is sure to make a few of you feel just right and add a little love to those handles.” – Steve
